The vineyard is located Tildin Sori close to the town of Barbaresco Costa Russi in. The term dialect Sorì indicates the top of the hill facing south, while Tildin stands for Clotilde (Clotilde Rey, Angelo Gaja's grandmother). All the 5 individual vineyard Gaja combine elegance and complexity, qualities that are the best balance in Sori Tildin. A wine of great finesse, combines beautifully with the unique climate characteristics of Nebbiolo. It has complex aromas: mineral, black cherry, cedar and spice. Full and rich in the mouth, very dense fabric, a multi-dimensional wine grnade marked by a number of fine tannins and ripe; extraordinary potential of ripening.

Grape varieties: Nebbiolo, Barbera

Vinification: grapes of each parcel are picked separately and by hand into small packing cases and fermented in conical sixty hectoliter oak fermenters. The special conical forms of the fermenters aid the extraction of sweet and elegant tannins in all three different grape varieties, Sangiovese, Cabernet Sauvignon and Cabernet Franc. Fermentation temperatures of this vintage were kept to an average of 81° Fahrenheit (27° centigrade) and never allowed to rise above 88° Fahrenheit (31° centigrade) in order to maintain the maximum aromatic character and impact of the of the fruit, well present in the musts. After a period of skin contact which lasted from three to four weeks, it went into oak barrels, not new, with the intention of putting it through the malolactic fermentation before the end of the year. During the aging of the wine, in new French oak barrels and for a period of eighteen months, the various lots of wine were kept separate. The wine was finally blended and bottled, then aged for a year in bottle before commercial release at 14° of alcohol.

Colour: Deep purple in color.

Taste: this muscular red wine offering musky aromas of smoke, truffle and minerals with complex aromas of toast, minerals, sour cherries, cedar and spices. Round taste, rich body, subtle and fine texture, ripe tannins are typical for this wine of great finesse.

Serving Suggestions: Excellent with the classic cuisine of Tuscany: tuscan Porterhouse, pizza margherita, and veal chops, for a few examples.
